Aspergillus niger belongs to the subphylum Deuteronomycetes, Hyphomycetes, Hychospora, and Moniliaceae. Aspergillus niger is a common species of Aspergillus fungi, widely distributed in soil, food and plant products. Humans have a long history of using Aspergillus niger. In ancient times, people used Aspergillus niger to make wine, sauce and vinegar. Aspergillus niger has the advantages of simple fermentation conditions, easy control, vigorous metabolism, short growth cycle, abundant enzyme production, and no toxic substances. It is widely used in food fermentation, animal husbandry, and pharmaceutical industries. For example, it is used in the fermentation industry to produce amylase, acid protease, cellulase, pectinase, glucose oxidase, citric acid, gluconic acid and gallic acid, etc.

Aspergillus niger hyphae are 15~20pm in diameter and 1~3mm long, with thick and smooth walls. A spherical apical capsule is formed on the top, which is completely covered with a layer of stem base and a layer of small stems. There are clusters of brown-black spheres on the small stems, with a diameter of 2.5-4.0μm. The hyphae are dark brown, the apical capsule is large spherical, the peduncles are double-layered. The conidia are spherical, black, dark brown, smooth or rough, and the diameter is 700-800μm. Strong resistance to ultraviolet rays and ozone. The hyphae of the fungus are well-developed and multi-branched. The conidiophore is produced from specialized thick-walled and enlarged hyphal cells (podocytes); the conidia head is like a "chrysanthemum". The hyphae and spores of Aspergillus niger usually show various colors, such as: black, brown, green, yellow, orange, brown, etc.. The fungus can cause mildew and spoilage of food, grains and fruits and vegetables. Therefore, it is also the main strain for making sauce, wine and vinegar, and for producing enzyme preparations (protease, amylase, pectinase) and organic acids (such as citric acid, gluconic acid, etc.).
The optimum temperature for the growth of Aspergillus niger is 37°C and the minimum relative humidity is 88%, which can cause mildew in grains with high moisture content and mildew in other industrial equipment. Under high temperature and high humidity environment, Aspergillus niger easily grows and reproduces in large numbers to produce enzymes and heat.
Some Aspergillus niger strains are known to secrete ochratoxins, mycotoxins, which can cause nephrotoxicity and kidney tumors in a variety of animal species, and pose potential hazards to human health through consumption.
